Culinary Magic Makes Cran-Almond Chicken Salad Cravable Crowd Favorite

Lise Russell was a spunky young chef, developing her career at Goodfellow Farms.
Their fresh herbs, lettuce and microgreens inspired farm-to-table fare, with entrées generously supplemented by stateside provisioning.
One of the owners made weekly trips in his own plane to outfit the farm store with coffee, charcuterie, cheeses, and fine meat.
On one trip, he discovered a deli chicken salad that really hit the spot. So he brought back an extra tub for Chef Lise to try.
After tasting the sample, she promised, “We can do better than that!”
Starting from scratch, Lise hand-chopped roasted chicken, adding a signature dressing, plus nutty almonds and sweet, tangy craisins. The result was a triumph, dense but creamy, perfectly seasoned without predictable chicken salad elements.
The farm couldn’t keep it in stock.
Customers drove out to Mt. Pleasant Road to fix that craving for an eight ounce tub of salad.
Packing plenty of flavour and texture without chunky vegetables, Lise’s recipe became a farm store staple.
So when she opened Chives, Lise introduced her recipe to a new crowd. Now it’s always on the Menu, along with her Classic Chicken Salad (for those who don’t like nuts), and a Curry Chicken favourite.
In fact, we stir up at least 150 pounds of Lise’s famous Cranberry Almond Chicken Salad every week.
